BAATI
















Hi friends , Baati is one of famous dish from North India ,in specific Rajasthan, as i m Rajasthani,so I know how much dal baati is liked all over the state,generally its made during rainy season coz it has lot of fat in it, and its made of thick wheat flour so it required lot of water after u eat and it has lot of Indian butter called GHEE its full of fat, ppl make it in Goth (its kind of Indian picnic) and its served with sweet dish called Churma of different flavor.

My mom was making dal baati at home she was making in regular gas oven i asked my mom can i try in my Convection oven, she said OK give it a try. I made it in oven and since then we never made in gas oven again :) it came out so good very well cooked from inside and crisp on outside see in pic i turned one baati upside down its golden brown from bottom also.


Ingredients
  • 2 cup thick whole wheat flour/ Gehu ka atta mota pisa hua, remember don't use ordinary whole wheat flour else texture will not b good.
  • 1 tbsp salt
  • Half tbsp baking powder
  • 250 gram ghee additional 4 tbsp for dough
  • Carom or Bishop's weed/ Ajvain in Hindi , its a rare spice mostly used in Asian countries so event if u don't have its OK its just for additional taste.
  • Water

Procedure
  • Put all wheat flour in big bowl make well.
  • Put ghee, salt ajvain and baking powder in it and mix it.
  • Once its mixed add water little by little until u make pile-able dough.
  • Leave it for 30 minutes
  • After 30 minutes make small balls and press them little to flat them.
  • Put in preheated oven at 180 c for 30 minutes and 10 minutes at 200 c.
  • once its done take it out u will have few cracks on it but even if u don't have crush it little like u crush orange by ur palm , once crack is there dip in ghee for 5 minutes and serve it with dal
Now i tell u secret this baati's traditional taste comes from a secret way of making it, in North India its pretty common but for other its not common or may b even not acceptable at all. :)

The secret is the heat which is used to make it its made of dried cow dung , yes u heard it right we call it KANDE or Gober ke chhane. see pic below















They collect all cow dung and dry them in pizza base shape.
once its completely dried they fire it up like camp fire and put these baati balls under it, this procedure is little weird for many but i tell u nothing tastes better than this :)




Vegetable pizza stuffed crust SPICY
















Hi friends today we gonna make Pizza, every one love pizza yea most of them do specially kids but to have good pizza its cost a lot but when u make one at home it will cost u much cheaper and great in taste too and making ur own pizza is much satisfying rather than eating it :) so take a look on recipe

Ingredients
  • Pizza dough CLICK HERE to see the recipe of pizza dough.
  • Marinara Sauce Half cup. CLICK HERE to see recipe.
  • Onion 1 medium
  • Bell pepper half
  • Pineapple 2 slices
  • Baby corn.
  • Mozzarella cheese
  • Oregano
  • Chilly flakes
Procedure
  • Take dough just palm full ball and roll it till 12 inch wide.
  • Take mozzarella cheese and cut slice in long a thin slice only, we are using this to make stuff crust.
  • Align those slices at the edge of rolled dough and put salt and oregano on it.
  • now from the edge just cover that cheese do not push over edge just push gently when u cover it.
  • Crust is ready now put marinara sauce in the middle evenly.
  • Put chilly flakes if u want it to b spicy else skip the step.
  • Put all vegetables sliced medium size except baby corn we will put that on top of cheese to give good presentation.
  • Put grated mozzarella cheese.
  • And put baby corn sliced in half from long not from between, align like logo of Mercedes of some wheel.
  • Put oregano on top.
  • put in preheated oven at 170 C for 20 minutes and then 10 minutes on 200 c to give it brown crisp.


Now when its ready do not cut with pizza cutter coz the edges will b thick and u may destroy the shape of pizza , use long heavy knife to cut ind serve it hot.

Marinara sauce

Hi friends today we will learn how to make marinara sauce, this is sauce traditional Italian sauce and reason for posting this sauce is co its used in 100's of dishes and its very tangy in taste :)

Ingredients
  • 6 tomato.\
  • 2 tbsp tomato paste
  • 1 medium size onion
  • 4 garlic cloves or 1 tbsp garlic paste
  • 2 bay leaves
  • 5 leaves of basil if fresh or 1 tbsp dried basil.
  • 4 tbsp olive oil or vegetable oil
  • 2 tbsp tomato paste
  • Salt and pepper add to taste
  • Half tbsp sugar
  • If u want extra spicy put chilly flakes into it

Procedure
  • Boil 2 cup of water on high heat.
  • Cut the top of tomato and put slice mark all over.
  • Put all 6 tomato in the water not more than 1 minute because we doing this just to peel off tomato skin coz it doesn't add to taste or doesn't have any nutrition value :)
  • take out from hot water and put immediately in cold water it gives a shocking effect to tomato.
  • From the slice mark peel off the skin.
  • dice tomato finely in small pieces.
  • Grind 3 tomato in mixer and make puree u can replace this step by using tomato puree by adding 3/4 cup of puree.
  • Put olive oil in pan.
  • after 2 minute when oil is hot put diced onion and garlic into it and saute.
  • when onion becomes translucent put diced tomatoes.
  • cook for 3 minutes then add tomato puree and tomato paste
  • Add salt, pepper, basil , sugar and oregano optional.
  • let it simmer for 20 minutes on low heat
  • Basically we want raw taste to go from tomatoes.
  • Taste it if necessary to cook more add little water and let it simmer more.
  • Cool it and use it

This sauce u can use in spaghetti, red sauce pasta, lasagna layering, pizza and many other dishes.



Garlic bread Pond

















Hi i had left over pizza dough.. was thinking what to do.....should i make bread stick, twisties, cinnamon rolls... so i thought lets make something different and came with this idea garlic bread pond, this is completely for garlic lovers. :)

Ingredients
  • Pizza dough CLICK HERE to see recipe how to make dough
  • 4 tbsp butter
  • 1 tbsp garlic paste or 6 clove of garlic mashed.
  • oregano half tbsp
  • Basil or tulsi patta finely chopped.
  • cheese optional

Procedure

  • With leftover Pizza dough make a round ball of palm size then jut put it on pan and press firmly to make it flat, ad then leave it for at least 1 hour to rise.
  • Once its doubled in size just push very softly the middle part of it do make well kind of thing, and then start pressing edges to create a wall so u can put ur butter into it.
  • Now take melted butter add garlic paste in it put oregano and basil into it.
  • Once mixed well, just pour it in the well u made from dough.
  • Put grated Mozzerella cheese (Optional i made without cheese)
  • Put the pan in Preheated oven at 180 C for 20 minutes and then 5 minutes at 200c just to give brown crisp on top.
  • Serve .

Once its done u can eat it by slicing it cut into squares, eat with cheese dip or any sauce u want to eat with and tell me how it turned out to b :)

White Sauce/Bechamel Sauce




















There are 5 mother sauce one of them is Bechamel sauce we know it by the name of White sauce, its thick white sauce made from corn starch or all purpose flour and milk with little butter.
This recipe i m posting coz its used in many baked dishes in many world cousines, its very easy to make , u can make it fast and Taste u know it very well :)

Ok before i keep talking about food lets discuss its recipe straight away...i believe every recipe has lot more to say rather then just putting all ingredient on website and posting procedure so, First we take a look on ingredients and procedure




Ingredients:
• 2 tbsp Flour
• 1-1/4 Cups milk, heated
• 2 tbsp Butter
• Salt to taste
• Black pepper to taste
• Salt to Taste

Optional ingredient
• Onion cut onion in 2 half
• 4 cloves
• Bay leaf
How to make Bechamel Sauce:
Take a heavy-bottomed saucepan and melt the butter in it.
Stir in the flour and cook, stirring continuously till the paste cooks and bubbles a bit.
Don’t let it brown, cook it for about 2 minutes.
Add the hot milk to it and bring it to a boil, keep stirring as the sauce thickens.
Add salt and pepper to it.
Optional put bay leaf over half onion and insert cloves to it so bay leaf doesn't move.
Reduce the heat, and cook for about 2 to 3 minutes.
Remove it from the fire and let it cool.

Once its cooled remove that piece on onion in this manner u can save ur time to extract those cloves and u have flavor already :) Now remember sauce should b as thick as Condensed milk.

Once its ready u can use it in Pasta , spaghetti, macaroni, Lasagna layering, and many other dishes that we will discuss soon .

WHOLE WHEAT BISCUIT


WHOLE WHEAT BISCUIT/ ATTA BISCUIT


Recipe of atta biscuits/ whole wheat cookies

1 cup atta (whole wheat flour)

5 tbsp vegetable oil or Ghee.

1/2 cup powdered sugar (cheeni)

1/2 tsp cardamom powder (Elaichi powder)

1 tsp baking powder

1. Mix all dry ingredients flour, baking powder, Cardamom powder and Sugar.

2. Sieve all.

3. Mix this in the oil or Ghee until they form sand like texture.

4. Preheat oven to 180 degree C.

5. Add milk spoon by spoon untill u can Form small balls from the dough and flatten them between your palms. Line a baking tray with cookie sheet and lightly grease it.

5. Place atta biscuits on the tray keeping a little distance between them. Bake them at 180 degree C for 10-12 minutes. Let the atta biscuits cool completely before sampling them. Store in an airtight container.

Pizza Base Dough
















PIZZA BASE DOUGH

Making pizza dough is easy...and outcome is worth that effort...So learn how to make dough .and u can make many other dishes from same.

Thing you will need
  • 1 1/4 c. warm water
  • 1 tsp. salt
  • vegetable oils or olive oil
  • 3 1/2 to 4 c. sifted flour
  • 2 packages dry yeasts
  • pizza pan or baking sheet
  • Vegetable Oils Or Olive Oil
  • Pizza Pan Or Baking Sheet

  • 1. Sprinkle the yeast into a medium bowl containing 1 1/4 cup warm water and stir until yeast dissolves.

  • 2. Add 2 cups sifted flour and stir until blended.
  • 3. Add another 1 1/2 to 2 cups flour and blend until too stiff to stir with a spoon.
  • 4. Turn the dough out onto a floured surface and knead it for 10 to 15 minutes until dough is smooth and elastic.
  • 5. Place the dough in another bowl greased with a small amount of oil. Turn the dough once so that the top is oiled.
  • 6. Cover the bowl with plastic wrap and put it in a warm place for about 45 minutes--until the dough rises to about double its original size.
  • 7. Preheat the oven to 180 C.
  • 8. Dump the dough back onto the floured surface and punch it down, getting rid of any bubbles. Divide the dough in half and let it rest a few minutes.
  • 9. Roll each half into a 12-inch circle, depending on your personal preference for how thick pizza crust should be. (It will puff slightly when baked.)
  • 10. Transfer the dough to an oiled pizza pan or baking sheet, or, if you have a baking stone, to a cornmeal-sprinkled wooden pizza peel for transfer directly to the stone.
  • 11. Add sauce, cheese and toppings as desired. If you like, brush exposed edges of the crust with olive oil.
  • 12. Bake each pizza for 15 to 20 minutes, or until crust is nicely browned and cheese is melted.
